Is the time slot I choose the take-off time?

No. The slot you select (morning, afternoon, evening or all day) describes your availability, not a take-off time. You tell the pilot when you're free, and they arrange the rest.

The pilot sets the departure

It's the pilot who determines the actual flight time, based on everyone's availability, the weather and their aircraft. The exact time is then agreed directly with them.
